So this may be nothing but I dont want to damage anything. I am assembling a new XXL and I am trying to open the V-Wheels by turning the eccentric nuts however ill be damned if I cannot move those nuts, they feel like they are welded in place and I am worried to put to much pressure on them. Is this common or do I have a problem? How much pressure should I be using?

Requires a fair bit.
You should put your wrench on the eccentric nut, then use your Allen wrench to loosen (slightly) the socket head cap screw that goes through the eccentric nut. Then you adjust the nut to where you want it, then you tighten the screw while holding the eccentric nut with the wrench exactly where you want it, which sets the eccentric nut.

The video shows you how to adjust the v wheels but the presenter leaves out a very important step.
When the wheels are adjusted leave the wrench on the ecentric nut and hold its position while tightening the allen bolt.
If you only adjust the v wheel it will loosen from vibration. The loose v wheel will cause major headaches.
