what is the preferred version of Carbide motion for the shapeoko 3xxl?
This doesn’t depend on machine model/size, but on the firmware on the controller.
Early SO3s used Grbl 0.9 which requires that one use Carbide Motion 3:

When it became available, Carbide Motion 4 which supported/required Grbl 1.1 was developed — any machine running Grbl 1.1 should use the current version of Carbide Motion:
