Given a closed vector… say a square, is there any way to cut just one side of the square?
I can do a contour cut along a line, but it seems that once a vector becomes closed that there is no way to break it into parts again?

You can edit nodes, and cut the vector at any node.
Or you can just create a new polyline from the 2 corners of the square.
