if one wished to model a marble run in 3D, this is pretty straight-forward to do using trigonometry:

I did a similar project to make some camlocks.
I used this image to create the ramp surface
In your case you could create a boundary to limit the cutter to the groove, and use the gradient to control the cut depth.
Problem being is CC only has the finish 3D path as a lace/zig-zag path, and no way to follow the groove outline on the contoured surface. You’d need another CAM software to cut along that shape.
