is there a way to change the depth of cut in a tool path from mm to inches?
You have to change the units for the entire project over to inches.

Under the covers everything is in mm. Even if you have inch selected the measurements are converted to mm in gcode.
gvBullard : Go to Design>Set Up: to the very bottom , to select inch vs mm.
gdon_2003 : Gcode units are dictated by the Post Processor output units. You can switch them at will.

I think Guy was referring to how GRBL is fundamentally configured using steps per millimetre, so it all ends up being converted back so the stepper motors can get the right number of pulses.
