Tracking Issues- Shapeoko XXL

I am trying to do more V-Bit projects but I am having issues. As you can see in the photos, the left side cuts much deeper than the right side.
Things I have tried:
-tightening eccentric nuts
-surfacing spoilboard multiple times
-squaring the machine

This happens on all of my V-Bit cuts. In the photos, the eighth side looks like it is a little off-level. How do I fix such a thing?

A couple of simple things you probably already checked;

1. Is the stock you are cutting of consistent thickness? i.e. have you measured both sides?

2. Have you checked the Z height left and right on the spoilboard manually? e.g. using the bit of paper under the cutter method?
