Can anyone provide a list of threadsizes used in the S3? I need to retap one of the tram plate and a few on my leveling feet at least. I found some various threads talking about a few holes here and there, but it would be nice to put everything in one place. Sorry if I missed this being published elsewhere, but I wasn’t able to find it yet.

Just like my 1984 Chevette Diesel…EDIT (MY) Shapeoko is a mixture of Metric AND SAE fasteners…This makes it a small nightmare trying to figure out what is what…M6 (.236") or 1/4" (.250") M4 (.157") or #8, (.164") etc…
I actually went out and purchased a Metric and SAE thread pitch gauge to help me not make an error. So my words of advice (other than buying a pitch gauge)…measure twice…maybe three times… I still love ya Ed,…but grrrrr.
We have since changed over to all metric in the newer machines as noted in the B.O.M. linked above.
Looking at the link above, the leveling feet are M5x0.8mm (coarse threaded). I think that the holes on the tram plate are also M5 (https://docs.carbide3d.com/assembly/Z-plus/Z-Plus1_0.pdf). Can I assume those will be coarse threaded as well?

Yes, everything is standard (coarse) thread.
