i have created a project of what i want to make but i need a video or something to show me how to tell it what parts i want cut down and what parts to leave alone. as in cut out around the letters on the outside or to cut the letters on the inside (engrave them) i am brand new to this program and to cnc works. just got mine yesterday.

here is my file. i would like to cut out all the letters down to the box at the bottom. then leave the ridge around the bottom box full height and the bar in the middle of the bottom box full height and cut the rest of it down about 1/2 inch

I used a 1/4" to get most of the material. Created a 2nd boundary around the letters to use a 1/8" to pick out the corners. And then a couple Advanced VCarves to whittle out the sharp corners.
The secondary boundary is on layer 2. (red)
You need to add geometry around things so as to be able to cut that area out:
Then you can select everything and assign a toolpath down to 0.5"
which previews as:
Note that things get confused where things overlap, so duplicate the text:
align the duplicate w/ the original:
and punch it out of the original:
Then select the text and union it w/ the outer geometry:
To get a better result, add an advanced V carving:
which yields a preview which is hopefully the desired result:
