I’d have a trial version of CCPro but have decided to go back to just CC. I work on a mac and removed it from my applications folder and then downloaded CC v7 but I keep getting the CCPro opening up.
How do I properly uninstall/remove ccPRO and just use CC?

Carbide Create Pro is a licensing mode for Carbide Create, not a separate program.
To remove the license you will need to go to Help | About and click on “Open Data Directory” which will reveal a folder which has a "license.txt file:
Delete that file, then quit and re-start Carbide Create.
