I’m encountering an issue while cutting red oak, this is the first time happening, any idea what is causing the chipping at the edges as per below photos?
Try a downcut endmill such as the #251?

You cutting cross grain and this is almost unavoidable on oak. You can mitigate with sharp tools, feeds and speeds, masking and coating the surface with shellac and/or polyurethane.
