I just received my 60 degree down cut Groove Jenny VBit the other day. I can’t vouch for how it does in plywood, but on Walnut & Wenge, it earn a place in my “use this for that” database.

I am not sure what is your final application for your project but if possible try putting a coat of sanding sealer or shellac before any milling. The finish will act as a glue to the wood fibers to help from tear out or chipping.
