I’m the proud owner of a new Shapeoko 5 pro! Does a dark mode exist for carbide motion/create? I tend to dislike white backgrounds, as my eyes tend to be a little sensitive after long periods of use.

No, not at this time.
I am with you on this one. Every piece of software needs to have a dark mode.
I’d like the modes to be ‘Jedi’ or ‘Sith’…not only do you get a change in UI light/dark colours, but all the safety code gets bypassed in Sith mode for maximum speed & danger - you don’t go to the dark side unless you absolutely know what you’re doing!
