Sitka font is on Windows CC5 but not Mac CC5. Which means I cannot work on projects very easily offline on my Mac. Is there any fix?

You could convert the text to paths before moving over to the Mac using a Boolean operation or very slight offset.
It’s a compromise, but if you can get away with doing the design on the PC, and later the toolpaths/CNC’ing on the Mac, you could try converting the text to paths using Inkscape on the PC, and then import them as an SVG into CC for doing the .c2d work.
Or perhaps select a similar serif font that’s available on both? I’m not a font psychologist (turns out there is such a thing, study of how fonts and typograpy affect learning) but it looks pretty generic in the linked samples.
