Does the Shapeoko HDZ for Shapeoko Pro give more Z height clearance over the Z plus?
Direct that question to sales@carbide3d.com. I doubt it. The frames of the Z are similar and you are limited by the gantry anyway. The HDZ had advantages in that it is stronger and gets more steps per MM over the Z-Plus. The Z-Plus is a good Z but since I upgraded my SO3 to the HDZ it is vastly superior to the Z-Plus. I have had some used machines I bought and sold with the Z-Plus and was not overly impressed by it. On my SO3 I went from belt Z to HDZ. The Z-Plus can handle the 65MM spindle from C3D but cannot handle the 80MM spindle. The HDZ can use routers and 80MM spindles. I believe for the heavier spindles they recommend the piston to hold the spindle up when power is turned off. Although some have had problems with the mechanism. The alternative is to place a block under the HDZ before powering off the HDZ/Shapeoko to keep the heavy 80MM spindle from falling to the spoilboard.
You original question is about more Z height but I cannot answer that. If it gets any more height it wont be much.

It does not. It bolts on at the exact same height/position. It will retract the spindle higher, so a long tool will clear a workpiece, but the lower extent of the Z-axis is unchanged.
