The version in plastic should work well, and the 60 degree V should cut it well, so long as things don’t overheat and begin to melt. I don’t think the V endmill would work well in aluminum — too much risk of breaking off the tip — source one w/ a rounded tip?
My inclination would be to go old-school and source the nicest piece of hardwood you could find and some brass sheet and make it using the traditional design-language of woodworking tools:
