Pocketing frustration

Rather than doing a pair of pockets, one gets better control and detailing by pairing a V carving toolpath and a clearing operation.

I’m trying to understand how to use V carve along with a pocketing operation. For example I am wanting to V carve an entire sign but there are large areas that need to be pocketed, would I simply V carve along the lines and then perform an inside pocket after a tool change to a flat in endmill on the inside of the pocket area?
