This is why we switched to Advanced V carving only in the new v8 beta:

The longer answer is:

V carving cuts down the center of a design and can only cut as wide/deep as the tool.

Advanced V carving cuts around the perimeter, and if one wants the field cleared, enable the checkbox for “Pocket Clearing”.
