I have a Shapeoko Pro XL so the numbers are wrong.
How do I go about correcting this in my controller?

It should work to just run the Setup Wizard:
https://carbide3d.com/hub/docs/shapeoko-setup/
Note that those Grbl dimensions would only be used if Soft Limits were enabled (which we explicitly do not support because it makes for hard-to troubleshoot problems).
What difficulty are you having that these need to be different?
I suppose you could just enable MDI and send the desired values, but I don’t think that they’d be used for anything in a normal setup.
I’m beta testing some new CNC software. At start-up, the latest build compares bed sizes in software config definition to grbl controller definition. When there’s a difference it prompts to change or keep what’s in the software.
Since I also use CC & CM along with Vcarve, I may not make any changes.
Why did it make troubleshooting difficult? Just curious.
Those numbers are always there by default but it doesn’t matter because they are not used. Setup Wizard won’t change anything. Soft travel limits are handled by Carbide Motion, not GRBL.
