I finally built my control box with the vacuum switch discussed here:

I’m using the IoT from Amazon that’s pretty commonly used: I found this: https://www.westmarine.com/buy/blue-sea-systems--ac-rotary-source-selector-switches--P009_273_008_503?recordNum=3 Something like this. In one position it would be turned on and off by the IoT. The other position would always have power. So, flipping the switch would turn on the vac; flipping it back gives control back to the IoT. Thanks to @ClayJar for the write-up on the three way switch. It’s exactly as you described. I added a second switch to the right of the vacuum switch to override & turn off the vacuum when powered by IoT, for jobs that don’t need the dust boot. I also have my kill and pause switches in there, and the IoT off to the side with a removable access panel.

Now I can start a job & walk away if I want, and don’t have to come back to shut off the vacuum. Plus I can hear the vacuum shut off from another room so I know the job is done.

Those labels are temporary - I’ll do something nicer & neater soon, because OCD.
