VCarve (Advanced) not working like it did

I have been doing a series in Advanced VCarve with pocket. In this Roundel (file attached) the area between the smaller circle and the Leaf/aircraft fused outline I want VCarved but every permutation I have tried removed the Lear/aircraft fused outline too. I have done this on several other designs but this one defies my resolution. I must be missing something simple but this is day 2 and my head is about to explode,

I believe you want a multi-layer V carving, something like:

and then determine how much this needs to be offset:

Then duplicate the geometry which this interacts with:

That’s very close. I might be able to take your suggestion and get to where I am trying.

The material I am cutting is a thin birch veneer with MDF backing. I was hoping to only have the round area around the leaf with a deep pocket, a very thin contour around the aircraft. Multilayer as you suggested would work on regular wood.
