I have a noob question here.
I want to surface a V-Carve. I just want to take off the minimal amount of material to get everything coplanar. What is the most efficient way to sneak up on it?

Something like to the technique shown at:
Given a rough piece of stock:

one sets it on the machine, and if need be, adds shims where/as needed to make it as level as possible. and clamp in such a way that the entire top may be surfaced off
