Pocket problems with a letter "B"

Need help! How do I tell the toolpath to cut a pocket in a letter “B” without it taking out the center part of the “B”? It just pockets the whole letter without leaving the interior “islands” in the B.

Also, can I change the depth of a cut to be a slanted cut? I’m making a cutting board, and would like to have the juice groove to start at .050 depth and increase to .125 depth at the other end of the 18" cutting board.

I hope I am describing my issues appropriately and clearly.

This should work by selecting the outline of the letter and the counters (inner portions) — if it doesn’t, it may be that the font is not properly constructed (doesn’t have correct path winding). If so, see:
