How can I create a coin tray or a pocket that has a curved bottom to match the shape of a coin? Something that you could lay a stack of coins.

There are a few ways to approach this one. It largely depends on the size of coin and your machine.
You could just a slot with a bowl bit. That will be limited to the size of bowl bit. That’s the most straightforward approach though.
You could also use a smaller ball bit to define your curve.
You could also do a close approximation of the slot with a square endmill and scrape the cusps with a coin to bring it to shape.
If you just mean, how should it be modeled then it depends on your software.
But give more details of what you’re doing and folks will be able to chime in. My mental model is a poker chip tray.

Yes I do have Carbide Create Pro. I’m looking at making a semi-circular tray for coins or poker chips.
